Chili Con Carne

  • 100g Corn Chips
  • 3g Crushed Chili
  • 1g Cumin Powder
  • 15g Fresh Coriander, Chopped
  • 15g Garlic, Minced
  • 100g Lean Fresh Minced Beef Grain-Fed
  • 100g Pork Lean Fresh Mince
  • 50g President Sour Cream 150g
  • 180g Red Kidney Beans
  • 50g Red Lion Cheddar
  • 25g Red Onion
  • 3g Salt and Pepper
  • 100g Sweet Bell Pepper (Small Mix)(300g)
  • 160g Tiptree Ketchup(310g)
  • 500ml Water
  • 15ml White Vinegar
Preparation

           1.In a deep pot, heat some cooking oil over medium heat and sweat the onion until transparent, being careful not to color the onion, about 5 minutes. Add the garlic and cook for 2 or 3 more minutes.


           2.Add both green and yellow peppers and cook for 3 minutes until they are partially soft. Increase the fire to medium high and add the beef. Mix well and cook until all liquids have evaporated and the beef started to brown.


           3.Low the fire again to medium and add the beans, coriander, cumin, chili, ketchup, vinegar, salt, pepper and water. Mix well to incorporate and let it bring to a gently simmer.

 

           4.Reduce the fire to medium low and let it simmer uncovered for about 1 to 1.5 hrs. scraping and stirring every often to prevent the bottom gets burned.


           5.Serve on a bowl and garnish with a dollop of sour cream, sliced green onion and cheddar cheese.
