Hanging Tender with Orange, Honey and Mustard

  • 120g Baby Spinach Leaves
  • 280g Baby Tomato
  • 1000ml Beef Broth
  • 200g Cherry Tomato
  • 16ml Honey
  • 16ml Olive Oil
  • 40ml Orange Juice
  • 16g Orange Zest
  • 20g Oregano Leaves
  • 280g Peeled Tomato
  • 800g Prime Hanging Tender Grain-Fed
  • 20ml Wholegrain Mustard
Preparation

1. Preheat oven to 160°C (140°fan-forced). 


2. Heat oil in a large ovenproof casserole dish over medium-high heat. Add beef and cook for 2-3 minutes each side or until browned. 


3. Add orange zest and juice, honey, mustard, stock, tomatoes and oregano. Bring to the boil, cover with lid and place in oven. Cook for 90-100mins or until beef is tender and falling apart. Season to taste.


4. When roasting beef, you can prepare some side dishes. After steaming the prepared potatoes, cut them into pieces with tomatoes for standby. Tender spinach leaves can be boiled quickly, or can be matched with some directly edible vegetables.


5. After the beef is done, put it on a plate with potatoes, tomatoes and vegetables, and sprinkle some oregano leaves for decoration
