- 1200g Australian Brisket Grain-Fed MB2+
- 250ml barbecue sauce (plus extra for serving)
- 250ml beef stock
- 2tsp black pepper
- 4pc Burger Bread buttered & toasted
- 4slice cheddar cheese
- 1tsp garlic powder
- 4portion handfuls coleslaw (store-bought or homemade)
- 1tsp onion powder
- 4pc Pickles (optional)
- 2tsp salt
- 2tsp smoked paprika
- 2tsp yellow mustard
Preparation
Slow-cooked to tender perfection, the Barbecue Brisket Burger is the ultimate butcher’s classic turned comfort food indulgence. A whole brisket is gently roasted in the oven until juicy and fork-tender, then glazed in smoky barbecue sauce for a caramelized finish. Layered into toasted brioche buns with melted cheddar and crisp coleslaw, this burger delivers deep, smoky flavor in every bite — proof that great things come to those who cook low and slow.
Instructions:

Prep the brisket • Preheat oven to 150°C. • Rub brisket all over with the yellow mustard, salt, pepper, paprika, garlic powder, and onion powder. |

Roast the brisket
• Place in a roasting dish or Dutch oven. Pour beef stock around (not over) the brisket. • Cover tightly with foil or lid. Roast for 3 hours, until fork-tender. |

Glaze the brisket
• Remove from oven, discard foil, and brush brisket generously with BBQ sauce. • Return to oven uncovered for 30 minutes to caramelize the glaze. |

Rest & slice/pull • Let brisket rest 15 minutes. Slice thinly across the grain, or shred with two forks if softer. Toss lightly with more BBQ sauce. |

Build the burgers
• Toast brioche buns. • Add sliced or pulled BBQ brisket, top with cheddar cheese (melted under grill/broiler if desired), add a spoonful of coleslaw, and crown with bun. |
