The Graindorge fromagerie is a French cheesemaker passed down from generation to generation. The Livarot cheeses are named after the town of Livarot, and can only be produced within a 12-mile radius of this town. The Livarot cheese comes encircled in 5 stripes of Carex, which resemble the 5 stripes on the uniforms of French army colonel's. This is also where the cheese gets it nickname from; 'The Colonel'.
The Livarot Graindorge Coupe is one of the oldest cheeses in the area and was created about 700 years ago. It is a fantastic cheese, with one of the most pungent smells that are out there. It has a smooth and moist orange-brown rind. The taste is nutty and spicy, surrounded by light citrusy flavors. This cheese is best eaten at room temperature and goes great with a Cabernet Sauvignon.
