Halloween dinner deserves something a little different.

Our Midnight Burger Set brings together juicy beef burgers, soft black brioche buns and creamy provolone cheese for a deliciously dark burger night at home.

The black brioche gives these burgers their unmistakable Halloween character, while the beef and melted cheese keep the flavours familiar and satisfying.

For the finishing touch, follow our recipe below to make a Korean-inspired "bloody" burger sauce. Rich, creamy and deep red, it adds a little sweetness, a little heat and plenty of Halloween drama.

Four burgers, ready for you to cook, assemble and make your own.

Midnight Burger with melted provolone and Korean bloody sauce

Make Your Own Midnight Burgers

Preparation: approximately 10 minutes
Cooking: approximately 10–15 minutes
Serves: 4

Start with the sauce, then cook the beef and assemble your burgers while everything is still warm.

Step 1. Make the Korean "Bloody" Sauce

The secret to our Halloween burgers is a simple Korean-inspired sauce made with gochujang, a fermented Korean chilli paste.

Its deep red colour, gentle heat and savoury sweetness make it the perfect contrast to the black brioche and rich beef.

Ingredients for 4 Burgers

50 g mayonnaise
30 g gochujang (Korean chilli paste)
10 g ketchup
5 g honey
2 g sesame oil

1) Place the mayonnaise, gochujang, ketchup, honey and sesame oil in a small mixing bowl.
2) Stir thoroughly until the ingredients are completely combined and the sauce has a smooth, deep-red colour.
3) Taste the sauce. Add a little extra honey for sweetness or more gochujang if you prefer a spicier burger.
4) Cover and refrigerate until you are ready to assemble the burgers.

The result is a creamy, slightly spicy sauce that looks wonderfully dramatic against the black brioche.

Step 2. Cook the Beef Burgers

1) Remove the four beef patties from their packaging shortly before cooking. Pat the surfaces dry if necessary.
2) Heat a frying pan or grill over medium-high heat. Add a little neutral cooking oil.
3) Season the patties lightly with salt and freshly ground black pepper. Place them in the hot pan, leaving enough space between each burger.
4) Cook for approximately 3–5 minutes per side, depending on thickness. Avoid pressing the patties down with a spatula, as this squeezes out their juices. Cook until the centre reaches 71°C.
5) During the final minute of cooking, place one slice of provolone on each patty. Cover the pan briefly to help the cheese melt over the beef.
6) Remove the burgers from the pan and allow them to rest briefly while preparing the buns.

Step 3. Toast the Black Brioche

1) Carefully slice each black brioche bun horizontally into a top and bottom half.
2) Place the buns cut-side down in a dry frying pan over medium heat.
3) Toast for approximately 1–2 minutes until lightly golden on the inside. The buns should remain soft and fluffy on the outside.

Step 4. Assemble Your Midnight Burgers

1) Spread a generous spoonful of the Korean "bloody" sauce over the bottom half of each brioche bun.
2) Place one cooked beef patty with its melted provolone on each bun.
3) Add your favourite toppings if desired. Crisp lettuce, tomato or pickles provide a fresh contrast to the rich beef and cheese.
4) Add another spoonful of the red sauce over the cheese. For a little Halloween drama, allow some sauce to drip naturally over the sides.
5) Finish with the black brioche top and serve immediately while the burgers are warm and the cheese is still beautifully melted.

Serve It With

Midnight Burgers are made for a relaxed Halloween dinner at home. Serve with crispy oven fries, potato wedges or a simple green salad.

For a fun family dinner, place the ingredients and toppings on the table and let everyone assemble their own burger. Add as much or as little "bloody" sauce as you like.

Dark brioche, juicy beef, melted provolone and a splash of red sauce. A little spooky. Seriously good beef.
