The name of this famous Swiss cheese comes from the valley of the Emme in the canton of Berne. It is a traditional, unpasteurised, hard cheese made from cow's milk. The aroma is sweet with tones of fresh-cut hay. The flavour is very fruity with a slight acidity. The most typical characteristic of Emmentaler AOP is probably its holes. They are the size of cherries or nuts, and appear during the maturing process.
