Only four Italian pecorino cheeses have received the Protected Designation of Origin certificate of the European Union. Our pecorino romano is one of them, and is subsequently one of the most ancient types of cheeses. Pecorino Romano DOP is only allowed to come from the islands of Sardinia, Lazio and the Tuscan Province of Grosseto. The cheese is made from sheep's milk by using traditional methods, is dry-salted by hand and is aged for 8-12 months.

It is a fantastic cheese that holds a sharp and a bit of a smoky flavor. It's an excellent grating cheese over pasta dishes, breads and salads. It is slightly sharper than Parmesan cheese and goes great with a with a big, bold red wine or a light beer.
