"Ricotta" means "re-cooked" in Italian, as it is produced by reheating and coagulating the whey left over from making other cheeses. It is soft and smooth in texture and sweet in taste. Normally Whey is low in fat but high in protein which makes it a favourite.Its mild flavour and creamy texture makes it easy for direct spreading, as well as a versatile ingredient for cooking. In Italy, it is normally mixed with sauce or soup, or added into pasta and risotto directly, or used in dessert or baking.
