The Salmon en croute is a southern France classic with a fresh Atlantic salmon. We have made for you one of the most succulent recipes using the best ingredients we have to offer. Procedure      

1. Fully defrost the salmon en croute in the fridge for 24 hrs.      

2. Prepare and egg wash whisking one whole egg with one tablespoon of water.      

3. Preheat the oven to 220 C.     

4. Prepare a flat oven tray with a sheet of baking paper and place the wellington on top.      

5. Brush the pastry evenly with the egg wash.      

6. Bake for 35 minutes at 220 C or until the pastry is flaky and golden brown.      

7. After baking, let it rest for 10 minutes before slicing.
