Also known as Chilean sea bass, Antarctic tooth fish is native to the Southern Ocean and is prized in restaurants around the world for its tender, flaky texture and indulgent, buttery flavor. It is similar to cod, with a relatively high fat content that makes it a delicious centerpiece to a light dinner. It is also a rich source of proteins and omega-3. 

This fish is at its best when prepared simply, with light seasonings that allow its rich flavor and delicate texture to truly shine. Try sautéing it with a light splash of soy sauce, sesame oil, garlic and scallions.
