Delivered hand-trimmed by our dedicated team of butchers, our fresh cubes of grass-fed lamb are perfect for your next stew or casserole. They are richly marbled with fat which, when slow cooked, is unleashed to create the most sumptuously rich and flavorful lamb dishes ever to grace your kitchen. They are produced by and imported fresh from Pure South, a 100% farmer-owned New Zealand cooperative known for producing some of the world’s finest, healthiest and highest quality free-range lamb.

Cooking tip
Season the lamb cubes and sear them in a little oil until evenly browned all over. Take out the lamb and fry a mixture of chopped vegetables in the pan. About one third of the meat weight gives you the weight of vegetables needed. Place the meat back in the pan. Add wine, stock or water, and herbs or spices. Make sure that the liquid covers at least a third to a half of the meat and bring to a gentle simmer. Cover with a lid and check from time to time and top up with liquid if needed. Allow a total cooking time between 1 – 1½ hours, or until tender. If you plan to include delicate vegetables, wait to add them until a few minutes before taking the stew off the heat.
